We are devoted to the notion that the expression of place or terrior is an important pursuit in general and specifically that the vineyards that surround Sacramento, and even some that lie within Sacramento, are not only worthy of expressing themselves but, indeed should be expressed.
We believe that in winemaking there should be as little interference from us as winemakers as possible in order to let the vineyard speak to us. Some of the things that stand in the way of this are high alcohol, high residual sugars, added tannin, pigments and concentrates and the practice of over-oaking. We work closely with our vineyard managers from the best vineyards using only the highest quality fruit. We pick at lower Brix with high natural acidity, ferment our wines dry and mature them in nearly 90% neutral oak barrels in order to produce complex, food friendly wines.
At Revolution Wines we see our mission as producing and selling our wines the way many restaurants produce and sell their food: local and seasonal, farm-to-table. We describe our wines as vineyard-to-table. We have worked to build our winery into something Sacramentans can be proud of by making high quality wines with the best local fruit available. So, as we make our wine in midtown from local fruit, we also sell our wines locally and, to a lesser extent , regionally.
The addition of a Bistro, tasting room and patio complete the experience of Sacramento terroir. From the completely local and seasonal produce, including locally grown and made fruits, vegetables, bread, cheeses and charcuterie, house made pasta, crackers and pickled delights, locally raised meats and fish, to our wines and menu of locally brewed ales, pilsners, ciders, Revolution Wines is a rare place for Sacramento Terroir Immersion.
